Broccoli sprouts are rich in vitamin C, E, folate and fibre. These tiny sprouts have a strong, tangy taste similar to other radishes. Add them to salads, sandwiches, smoothies and as a topper for your favourite dish.
Research has found that 3-4 day old broccoli sprouts contain over 50 times more sulforaphane than mature broccoli. Sulforaphane is a cancer-fighting chemical found in cruciferous vegetables including broccoli, brussel sprouts, kale, radish and cauliflower.
How to grow broccoli sprouts
- Fill a glass jar with 1.5 tbsp of seeds and fill with water.
- Soak in water for 4-8 hours.
- Rinse well with water (this is particularly important in humid conditions).
- Drain well using a sprouting lid, jar or tray.
- Repeat the rinsing and draining process 2-3 times daily until your seeds sprout.
- After 3-6 days, the yield will be approximately 1-1.5 cups.
